     Good day, fellow foodies. So just last week one of my favorite restaurants opened back up in San Marco. Bistro Aix has been a staple to San Marco and the culinary scene in Jacksonville. Some may consider Bistro the OG. I can definitely say that Bistro Aix is the restaurant that got it all started for me.

     While I was going to culinary school, I was learning new flavors and tasting things that I never had a chance to or ever thought about tasting. So, Bistro Aix was one of local places where I would go to taste new things and they made me fall in love with food. One of the dishes they had back then were Duck Crepes & Duck Spring Rolls. I ate so much duck, it isn't even funny. The Duck crepe had a mixture of braised duck and goat cheese. It was heaven. It's a dish I still think about, till this day. But that was then and this is now!

     Bistro Aix closed in September of 2017 due to damage from Hurricane Irma. At first it didn't look like the restaurant would ever recover. But, Jacques Klempf and Fraser Burns, owners of Bistro Aix, have been working hard to get the restaurant ready for service. And boy is she ready. Just think about it. The restaurant was flooded with 4 to 5 feet of water.

     As you can see the developers and design team have done a great job getting Bistro Aix back in damn good shape. I will be back, with a full review. But until then, bask in the glory that is Bistro Aix. So glad she's back!!!!
